Dr. Anderson de Souza Sant'Ana (Invited Speaker)

anderson santanaDr. Anderson Sant’Ana is an assistant professor of Food Microbiology at the Department of Food Science, Faculty of Food Engineering, University of Campinas, Brazil.

He has a Bachelor degree in Industrial Chemistry (USS, Brazil), Master of Science in Food Science (UNICAMP, Brazil) and PhD in Food Science (USP, Brazil), including a one-year internship at Rutgers - The State University of New Jersey (New Brunswick, USA).

He was a postdoctoral fellow at University of Sao Paulo and currently is involved in teaching (graduate and undergraduate) students at UNICAMP and his major interests are focused on quantitative aspects of food microbiology and safety, including predictive food microbiology, microbial risk assessment and meta-analysis.

Dr Sant'Ana has published over 55 peer-reviewed articles and currently serves as Editor-in-Chief of the scientific journals Food Research International and Current Opinion in Food Science.

 

Dr. Ursula Gonzales-Barron

ursula barronDr. Ursula Gonzales-Barron, a Peruvian-Irish national, graduated with first-class honours in the Faculty of Food Industries at the National Agricultural University La Molina, Peru (1999), and later on she obtained the title of Food Engineer.

She pursued PhD studies at the Biosystems Engineering De¬partment of University College Dublin (UCD), Ireland (2006), through the award of the prestigious Irish Walsh Fellowship.

After a postdoctoral stage in the School of Chemical Engineering in the University of Manchester, UK (2005), she took on the positions of Lead Researcher (2005-2007) and later on Senior Researcher (2007-2012) at UCD Biosystems Engineering, Ireland.

Her expertise resides in diverse areas of food quality and safety, including mathematical modelling, predictive microbiology and risk assessment of pathogens.

She has integrated into food safety research and risk analysis, a series of modelling tools such as meta-analysis, zero-inflated count data models and Bayesian statistics. Currently, she is involved in collaborative research with the US Department of Agriculture; Campinas State University and the University of Sao Paulo.

Eager for the establishment of research links, research dissemination and further training, Dr. Gonzales-Barron has been in receipt of seven grants from competitive European calls.

In 2013, she was awarded a 5-year Development Career Fellowship to carry out research in the Polytechnic Institute of Braganza (IPB), funded by the Portuguese Foundation for Science and Technology (FCT).

Dr. Gonzales-Barron has published over 50 peer-reviewed articles; has presented at over 40 international conferences; has written 9 book chapters; has lectured at both undergraduate and postgraduate levels; and has supervised over 14 postgraduate students. She currently serves as Editor in the LWT – Food Science and Technology Journal.

Prof. Vasco Cadavez

vasco cadavezDr. Vasco Cadavez obtained his first degree in Animal Science in 1993 and his Masters degree in Animal Production with specialisation in Feed and Nutrition in 1998 at the Portuguese University of Trás-os-Montes e Alto Douro.

After a novel research on carcass composition and quality using ultrasound, he obtained his PhD degree in 2004.

He is currently a Professor at the Animal Science Department of the Polytechnic Institute of Braganza (IPB) and an active Investigator at the Food Safety and Technology Group at the CIMO Mountain Research Centre, based at IPB.

Dr. Cadavez is very knowledgeable in a wide range of mathematical and statistical modelling techniques applied to food quality and safety, such as predictive microbiology, acceptance sampling and shelf-life determination.

He has integrated into food safety research, a series of modelling tools such as meta-analysis, linear and non-linear mixed-effects modelling, and count data models. Involved in research collaboration with the US Department of Agriculture and the University of Copenhagen, he is further advancing the state-of-the-art of dynamic predictive microbiology and food safety meta-analysis.

Dr. Cadavez is an expert in computer programming, and specifically the use of the R software and SQL processing, which he teaches at graduate level and international events.

Dr. Cadavez has academically supervised 15 students, has published over 30 peer-reviewed articles, has authored/edited 2 books, has written 10 book chapters, and has presented at over 50 international conferences.
